I was looking for a Gluten Free, Yeast Free bread recipe that could be a substitute for my Mom's Brown Molasses Bread recipe. My Mom makes the most fabulous brown bread and has been doing so every week for
about 52 years. It is great as a breakfast bread and as a sandwhich bread. Oh and grilled cheese sandwhiches, you can't beat it. I first made a Teff Molasses Yeast bread recipe and it turned out okay, if a bit too dense, gritty and not very risen. But delicious! Very very tastey! But too sweet and not a suitable size for an everyday sandwhich bread. I knew it would be close to impossible to find a recipe as good as hers, and I haven't yet. But this Gluten Free, Yeast Free recipe is pretty darn tastey and I could definitely live with it, with a little fine tuning. Plus it has a texture very much like my Mom's bread. Oh Oh... and I haven't even tried toasting it yet. Totally slipped my mind! Rambling a bit... Anywho
I started with, what I think, is an excellent base recipe for a GF, YF bread. You can do with it what you will, as did I.
First the base recipe I used, Carol Fenster's Yeast Free Gluten Free Sandwhich Bread
Carol says ' eat well... without the ingredients you don't want. ' I agree!
- 1 Cup Brown Rice Flour
- 2/3 Cup Potato Starch
- 1/3 Cup Tapioca Flour
- 1 tsp Sugar
- 2 tsp Xanthan Gum
- 3/4 tsp Butter Buds
- 1/2 tsp Unflavoured Gelatin Powder
- 1/2 tsp Cream of Tartar
- 1/2 tsp Baking Soda
- 1 large Egg, lightly beaten
- 1-1/3 cups Nonfat Plain Yogurt
- 2 Tb Canola Oil
Directions:
Preheat oven to 375 F. Coat two 5" x 2 -1/2" nonstick pans (or 8" x 4" non stick pan) with cooking spray.
Combine dry ingredients in mixing bowl and mix well. With electric mixer on low, add remaining ingredients and blend on medium speed for 2 minutes. Spoon into prepared pans, wet spatula and smooth tops. Bake small pans for 45 - 50 minutes or until top is deeply browned and loaf sounds hollow when tapped. Don't underbake. Cool on wire rack. Slice when bread reaches room temperature. HA! HA! Like!!!!
Makes two small loaves or one large one.
Now here is my recipe.
Jacie's Gluten Free, Yeast Free Teff Molasses Bread
(Doubled to make one large loaf, fits a 9" x 5" pan)
- 1 Cup Brown Rice Flour
- 1/2 Cup Low Fat Soy Flour
- 1/2 Cup Teff Flour (very high in iron and has all 8 amino acids)
- 1/4 Cup Almond Flour
- 1 -1/2 Cup Potato Flour
- 2/3 Cup Tapioca Flour
- 2 tsp Brown Sugar
- 2 Tb * Guar Gum (or 4 tsp Xanthan Gum)
- 1 tsp Unflavoured Gelatin Powder
- 1 tsp Cream of Tartar
- 1 tsp Baking Soda
- 2 Large eggs, lightly beaten
- 2 -2/3 Cups Nonfat Plain Yogurt ( I make my own and it has a little bit more liquid than store bought)
- 2 Tb Melted Margarine
- 3 tsp Molasses
- 4 Tb Canola/Olive Oil
*Guar Gum can sometimes act as a laxative. Some people it may bother, others not. Keeps one from over eating. A good thing!
Bake @ 375 F for 65 - 70 minutes ( for a 9" x 5", 3 " deep pan)This recipe is perfect for sandwhich bread. To fine tune it slightly, I would reduce the Brown Rice Flour to 1/2 Cup and increase the Teff Flour to 1 Cup and up the 3 tsp of molasses to 1 generous Tb.
For Breakfast Bread
Reduce Brown Rice Flour to 1/2 Cup, increase Teff flour to 1 cup, increase molasses to 1 generous Tb, add 2 tsp. cinnamon.
Enjoy!
Now time to go and draw. Oh and I'm 12 lbs lighter than 3 weeks ago, I didn't even loose that much when I was working out and cycling everyday!
